‘Doctor's’ sausage' is familiar to everyone in Russia. It appeared back in 1936 and was recommended for extra nutrition after a long period of starvation (“those who had their health undermined as a result of the Civil War and tsarist despotism”) – hence the name.
The recipe consists of beef (25%), pork (70%), eggs (3%) and milk (2%) and the meat had to be of the highest grade.
