Russian pancakes (‘blini’) are baked from wheat yeast dough, which makes them puffy and lacy.  

The number of fillings for them, meanwhile, is countless. The most popular fillings are caviar, mushrooms, sour cream or jam. In March, a real pancake feast is held on ‘Maslenitsa’.
